Panzanella

Panzanella is a popular Florentine recipe, consisting of chunks of bread and tomato. I have always heard that panzanella was thought up as a way to use stale bread so it didn’t go to waste, but I’m not sure if that’s true or not! Anyways it’s a really healthy dish to eat and it’s especially popular during the summer months. This recipe was just me mimcking a picture I came across so it’s not really something i measure as much as I just go based off the eye. That being said, I tried to estimate the amount of everything used, I hope you enjoy!

Ingredients: 1 loaf or Italian bread cut into chunks or cubes, it’s best if it’s a bit stale.
1 red onion
3-4 Roma tomatoes
Olive Oil to taste
Balsamic Vinegar to taste
Lemon Juice to taste
1/4 cup of Parsley

Start off with your bread cubes in a large bowl and add about 1/2-3/4cup of olive oil depending on your preference. Then dice red onion and tomatoes and add them to the bread mixture. Next chop your parsley and add that as well, then dress the salad with again 1/2-3/4 cup depending on your preference. Add a 1/2 tbs lemon juice before tossing and serving the finished product. Enjoy!
